Coconut Oil Biscuits!


I made these coconut oil biscuits yesterday for breakfast. They were so yummy and the kids loved them as well!



I got the original recipe from Pinterest, of course. You can find the recipe here:


I had to tweak the recipe a little because I did not have any self-rising flour. 
Here is how I made them.

Ingredients:
- 2 cups all-purpose flour
- 3 tsp. baking powder
- 1 tsp. salt
- 1/4 cup coconut oil
- 3/4 cup milk

Directions:
Preheat oven to 425 degrees.
Add all ingredients to a bowl and mix well. 
Then, knead the mixture until well combined.
Once the dough is no longer sticking to the sides of the bowl take pieces of the dough and roll it between your hands, forming a ball.
Then, flatten it between your palms but not too flat and place onto a pan.
(I did this because I didn't have a biscuit cutter. If you have one, skip this step and use that.)
Repeat until there is no more dough.
Bake for 10 minutes, or until the biscuits have risen and are slightly brown on top.

And, that's it! 
Super simple and super yummy biscuits!

Grocery Haul and Menu Plan: Week of March 16 - 19

     I know it's been a while since I have last posted and I won't be making any promises but I WILL be posting more often from now on! I plan on posting at least once a week with my grocery hauls and menu plans.

     Anyways, I usually plan my menu and grocery shop on Thursdays but last Thursday we were busy. We went to the Stockshow because they were offering free general admission that day. The kids had a blast!

     On Friday, we decided to stay home and scrape up something to eat despite being low on groceries. We had breakfast for dinner and ate sausage and egg tacos.
     On Saturday, we took the kids to the park and we ordered pizza for dinner.

Sunday, we had leftover pizza.
Finally, Monday, is when I wrote out a menu and went grocery shopping!

Here is my haul:

Menu:
Monday: spaghetti with bread sticks
Tuesday: Burgers and french fries
Wednesday: tuna sandwiches
Thursday: bean soup with cornbread

The meals aren't set for a certain day. For example, I had wrote down spaghetti to be eaten on Wednesday and burgers for Monday (last night). But, hubby got home from work late last night and since spaghetti is fairly quick to cook we decided to have that last night and burgers another night.
